Slow Cooker Honey BBQ Sriracha Pork Roast

A lot of flavors going on in this one! Inspired by my new favorite BBQ sauce from Trader Joe’s. Sweet and spicy pork roast that is juicy, tender and an easy weeknight meal!

Adjust the heat accordingly on this recipe. I like a bit of heat, but not blow your face off melting heat. I created this a couple weeks ago for my family and I’m already dreaming about having it again!

You may also thicken the sauce in the base of the crockpot after the meat is cooked if it appears too thin. It makes for an amazing sauce that you can pair with mashed potatoes, hashed browns or rice. It would also be great for tacos!

Slow Cooker Honey BBQ Sriracha Pork Roast

Ingredients
  

  • 2-3 lb boneless pork roast, trimmed of fat
  • 1 1/2 cups honey
  • 3/4 cup reduced sodium soy sauce
  • 3/4 cup BBQ sauce
  • 1 tbsp minced garlic
  • 1-2 tsp sriracha (more or less, adjust your heat)
  • 1/4 tsp crushed red pepper flakes (optional)
  • salt and pepper

Instructions
 

  • In small saucepan over medium heat, whisk together the honey, soy sauce, BBQ sauce, garlic and crushed red pepper flakes. Turn to medium high and bring mixture to a boil. Reduce to a simmer and cook, stirring occasionally, for 15 minutes until sauce is thickened and reduced.
  • Trim excess fat off of the roast. Pat dry and season with salt and pepper. Place in the slow cooker.
  • Pour the sauce over the pork roast. Cover the slow cooker and cook on LOW for 6 hours.
  • Remove the pork roast and shred with two forks. If your sauce appears to thin, you may thicken it up using the following steps: Whisk together 2 tbsp cornstarch with 1/4 cup cold water. Pour into the crockpot and put on the saute function while shred the pork roast. Return the meat to the crockpot and toss to coat. Serve over potatoes, on a wrap, on a bun or in tacos! Refrigerate leftovers in an airtight container.
