30-minute Chicken Caprese Skillet

Turn your classic Caprese salad into a full meal! This 30-minute skillet includes juicy seasoned chicken topped with pesto, melted mozzarella cheese, fresh tomatoes and basil. Bring it all together with a balsamic reduction drizzle!

Ingredients
  

  • 1.5-2lb boneless, skinless chicken breasts
  • salt and pepper, freshly ground
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 6oz jar store-bought basil pesto
  • 1 cup shredded mozzarella cheese
  • 6-8 small cherub tomatoes, diced
  • Balsamic glaze (storebought)
  • Fresh basil, roughly torn

Instructions
 

  • Preheat the oven to 400° F.  
    Using a sharp knife, slice the chicken breasts in half lengthwise. Season both sides with salt and black pepper. Heat a large skillet over medium high heat with the oil and butter. Once melted, place chicken breasts in the pan. Cook on each side until lightly browned and can easily release from the pan, about 4-5 minutes each side. 
    Spoon pesto onto the tops of each chicken breast, making sure to cover. Sprinkle mozzarella cheese over the top and add on the tomatoes. 
    Transfer the skillet to the oven and cook for 12-14 minutes or until the chicken reaches an internal temperature of 165° F. Remove from the oven and garnish with torn basil and a drizzle of balsamic glaze.
