I don’t like to play favorites with my wrecipes, but this sits among my top 10. I love a traditional salad with all the fixins’, but sometimes you just need something a little different. That crunch? Perfection.
This creamy dressing is also perfection. The salad comes together in a pinch and is much healthier than some of the recipes I post to my site. We could all use a little less butter and heavy cream in our lives, right?
Thai Crunch Salad
Full of color, bold fresh flavors and a creamy peanut dressing that draws it all together. Easy recipe that is perfect for lunch or dinner.
Ingredients
Dressing:
- 1/4 cup soy sauce
- 1/3 cup tahini (or creamy peanut butter)
- 1 tbsp minced garlic
- 1/2 tbsp chili onion crunch OR red pepper flakes
- 1 tbsp sesame oil
- 1 tbsp fish sauce
- 2 tsp honey
Salad:
- 16 oz bag coleslaw mix
- 2-3 cup shredded chicken
- 1/3 cup chopped roasted peanuts
- 1 red pepper, diced and cored
- salt and pepper
- Green onions, crunchy chow mein noodles for garnish
Instructions
- Whisk together the above ingredients until smooth. In a separate bowl, combine the salad ingredients. Pour in the dressing and toss to cover completely. Serve cold or at room temperature. Refrigerate leftovers.
