I don’t like to play favorites with my wrecipes, but this sits among my top 10. I love a traditional salad with all the fixins’, but sometimes you just need something a little different. That crunch? Perfection.

This creamy dressing is also perfection. The salad comes together in a pinch and is much healthier than some of the recipes I post to my site. We could all use a little less butter and heavy cream in our lives, right?

Ingredients

  

Dressing:

• 1/4 cup soy sauce
• 1/3 cup tahini (or creamy peanut butter)
• 1 tbsp minced garlic
• 1/2 tbsp chili onion crunch OR red pepper flakes
• 1 tbsp sesame oil
• 1 tbsp fish sauce
• 2 tsp honey

Salad:

• 16 oz bag coleslaw mix
• 2-3 cup shredded chicken
• 1/3 cup chopped roasted peanuts
• 1 red pepper, diced and cored
• salt and pepper
• Green onions, crunchy chow mein noodles for garnish

Method

 

1. Whisk together the above ingredients until smooth. In a separate bowl, combine the salad ingredients. Pour in the dressing and toss to cover completely. Serve cold or at room temperature. Refrigerate leftovers.
