Thai Crunch Salad

Full of color, bold fresh flavors and a creamy peanut dressing that draws it all together. Easy recipe that is perfect for lunch or dinner.

Ingredients
  

Dressing:

  • 1/4 cup soy sauce
  • 1/3 cup tahini (or creamy peanut butter)
  • 1 tbsp minced garlic
  • 1/2 tbsp chili onion crunch OR red pepper flakes
  • 1 tbsp sesame oil
  • 1 tbsp fish sauce
  • 2 tsp honey

Salad:

  • 16 oz bag coleslaw mix
  • 2-3 cup shredded chicken
  • 1/3 cup chopped roasted peanuts
  • 1 red pepper, diced and cored
  • salt and pepper
  • Green onions, crunchy chow mein noodles for garnish

Instructions
 

  • Whisk together the above ingredients until smooth. In a separate bowl, combine the salad ingredients. Pour in the dressing and toss to cover completely. Serve cold or at room temperature. Refrigerate leftovers.
