Aren’t dump and dash crockpot meals the best? I can barely keep my head above water during the week with work, children’s activities and my bakery side hustle. I love preparing in advance and knowing that I don’t have to cook a meal at the end of the day when I am EXHAUSTED.
PS-Make sure not to wear Apple Air Pods while preparing this meal. I actually lost a pod and had to dig around to get it out. Sigh..
Slow Cooked Basil Tomato Chicken
Another great recipe for busy weeknights. Only a handful ingredients for this flavorful crockpot meal! Serve over noodles or potatoes.
Ingredients
- 14.5 oz can diced tomatoes
- 1 tbsp italian seasoning
- 3/4 cup tomato pasta sauce
- 2/3 cup heavy cream
- 2 tbsp corn starch
- 1 tbsp minced garlic
- 1 tsp salt
- 1 tsp pepper
- 4 boneless, skinless chicken breasts
- finely chopped fresh basil leaves, for garnish
Instructions
- 1. Whisk together the cornstarch and heavy cream. In a medium sized bowl, combine the heavy cream/cornstarch, diced tomatoes, pasta sauce, garlic and salt and pepper. 2. Place a liner in slow cooker. Pour the mixture in. Add the chicken breasts, pressing down in to the sauce and spooning some over to submerge. 3. Cook on low for 4-6 hours, making sure the internal temperature of the meat is above 165 degrees F. 4. Stir in the fresh basil leaves and use for garnish. Serve over noodles or potatoes. Refrigerate leftovers.
