- 4 skinless, boneless salmon fillets
- 1 tbsp olive oil
- 2 tbsp cajun seasoning
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1/3 cup orange marmalade
- 1/4 cup lime juice
1. Pour olive oil into a nonstick skillet over medium heat. Combine the cajun seasoning, salt and brown sugar and run over the fillets. Cook fillets over medium heat for 3-4 minutes on each side. Whisk together the marmalade and lime juice. Reduce heat to low. Pour into the skillet over the fillets and cook until heated through. Spoon additional over salamon.Garnish with fresh parsley or cilantro. Serve in taco shells or over rice.
