Slow Cooked Thai Chicken

Another easy weeknight meal made with a handful of pantry ingredients.Takes about 5 minutes to throw together! Serve this over noodles or sweet potatoes!

I created this recipe after having this meal at a local restaurant. It was served over sweet potatoes and I have been CRAVING it ever since! My family doesn’t like sweet potatoes so I created it into a pasta dish for them and it was TASTY. So much that I sat infant of my TV and ate the pasta leftovers the next day…

Slow Cooked Thai Chicken

Easy weeknight meal made with a handful of pantry ingredients.Takes about 5 minutes to throw together! Serve this over noodles or sweet potatoes!

Ingredients
  

  • 2 lbs boneless, skinless chicken breasts cut into chunks
  • 1 red and 1 yellow pepper, cored and diced
  • 1 cup coconut milk
  • 1 tbsp garlic
  • 2 tbsp soy sauce
  • 1/3 cup peanut butter, creamy
  • 1 tsp grated ginger
  • 1 tbsp rice vinegar
  • salt and pepper, to taste

Instructions
 

  • Combine all ingredients in the base of crockpot and stir well. Cook on low for 6-8 hours.
  • Prior to serving, cook 8 oz Alfredo noodles until al dente or prepare sweet potatoes in the oven, instant pot or microwave. Serve warm. Store leftovers in a sealed container in the refrigerator. Enjoy!
