Slow Cooked Thai Chicken
Easy weeknight meal made with a handful of pantry ingredients.Takes about 5 minutes to throw together! Serve this over noodles or sweet potatoes!
Ingredients
- 2 lbs boneless, skinless chicken breasts cut into chunks
- 1 red and 1 yellow pepper, cored and diced
- 1 cup coconut milk
- 1 tbsp garlic
- 2 tbsp soy sauce
- 1/3 cup peanut butter, creamy
- 1 tsp grated ginger
- 1 tbsp rice vinegar
- salt and pepper, to taste
Instructions
- Combine all ingredients in the base of crockpot and stir well. Cook on low for 6-8 hours.
- Prior to serving, cook 8 oz Alfredo noodles until al dente or prepare sweet potatoes in the oven, instant pot or microwave. Serve warm. Store leftovers in a sealed container in the refrigerator. Enjoy!
