Chicken Bacon Gnocchi

Gnocchi has my entire heart. If you haven’t tried it, you are missing out. I often stock up on the Wild Garlic from World Market if I don’t have time to make my own.

Chicken Bacon Gnocchi

Delicious and flavorful comfort dish with smoky bacon and creamy sauce. The perfect meal for any night of the week and ready in under 20 minutes.

Servings 4 servings

Ingredients
  

  • 6 slices bacon, cooked and crumbled
  • 1 ½ cups shredded rotisserie chicken
  • 1 tbsp minced garlic
  • 3/4 cup chicken broth
  • 1 cup heavy cream
  • 1 tbsp italian seasoning
  • pinch of nutmeg
  • 16 ounce bag of gnocchi
  • ½ cup fresh grated parmesan (more for garnish)
  • salt and pepper, to taste
  • chopped parsley, garnish

Instructions
 

  • Cook the chopped bacon in a deep skillet until crisp. Remove bacon and discard most of drippings, leaving about 1 tbsp in the pan. Heat to medium and add the garlic, stirring well.
  • Add the chicken broth, cream, seasonings and gnocchi. Bring to a boil. Reduce heat and continue cooking for 4-5 minutes, until reduced and sauce thickened up. Lastly, stir in the cheeses, salt and pepper. Garnish with parsley. Serve immediately warm.
