Bacon Pesto on Focaccia Italian Sammies

This pesto recipe is both salty, savory and ooooohhh so delicious. Goes great on pasta, sandwiches, pizza or whatever your heart desires.

This recipe requires only a handful of delicious ingredients and is easily thrown together in your food processor. Find yourself a good olive oil, fresh basil and spinach and a fancy parmesan.

The taste is INCREDIBLE. I decided to use my bacon pesto to make homemade Italian sandwiches on focaccia bread. Honestly, it could be used alone as a dip with crusty bread. It’s that good!

I went ahead and used a tried and true recipe by Alexandra Cooks. It’s easy and always turns out well. She recommends a longer rise, but also gives you the option to do it in an afternoon. When the bread was complete, I made it into Italian sandwiches (which I continued to eat for three days afterwards). I sliced the bread in half horizontally. I spread mayo on the lower half and then placed deli ham, pepperoni, salami and provolone cheese over. On the top half, I spread my bacon pesto. Then, I sliced the slab into pieces. Seriously, incredible.

Ingredients
  

  • 6 strips bacon
  • 1 cup fresh spinach leaves
  • 1/2 cup packed basil leaves
  • 1/4 cup finely grated parmesan cheese
  • 3 tbsp white wine vinegar
  • 1/3 cup olive oil
  • black pepper, to taste

Instructions
 

  • Saute bacon until crisp. Transfer to lined plate and reserve 2-3 tbsp bacon drippings.
  • In the food processor, pulse the bacon, spinach, basil, cheese, vinegar and pepper until it turns into a paste. With the processor still running, drizzle in the oil and reserved bacon drippings until smooth. You may need to add in a little more bacon drippings, a little less. Season the pesto with black pepper. Will already be salty due to the bacon. Enjoy!
