Bacon Pesto
This pesto recipe is both salty, savory and ooooohhh so delicious. Goes great on pasta, sandwiches, pizza or whatever your heart desires.
- 6 strips bacon
- 1 cup fresh spinach leaves
- 1/2 cup packed basil leaves
- 1/4 cup finely grated parmesan cheese
- 3 tbsp white wine vinegar
- 1/3 cup olive oil
- black pepper, to taste
Saute bacon until crisp. Transfer to lined plate and reserve 2-3 tbsp bacon drippings.
In the food processor, pulse the bacon, spinach, basil, cheese, vinegar and pepper until it turns into a paste. With the processor still running, drizzle in the oil and reserved bacon drippings until smooth. You may need to add in a little more bacon drippings, a little less. Season the pesto with black pepper. Will already be salty due to the bacon. Enjoy!
