Cinnamon English Muffin Bread

What’s better than English Muffin bread? Cinnamon English Muffin Bread! My dad, Billy Bishop, knocked it out of the park with this one. The recipe is originally from Beyond the Chicken Coop. We took their recipe, did a spin off with the cinnamon twist and made a few tweaks. I hope your family enjoys it as much as we do! 

Cinnamon English Muffin Bread

Ingredients
  

  • 2 cups milk warmed
  • 4 1/2 tsp active dry yeast (2 packets)
  • 1 tbsp honey
  • 1/2 cup water
  • 5 cups flour
  • 2 tbsp oil
  • 2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 2-3 tbsp cornmeal or semolina flour
  • 2/3 cup cinnamon baking chips
  • 2 tbsp melted butter

Instructions
 

  • Place milk in a large mixing bowl with the honey and yeast. Stir lightly and allow mixture to rest for 5 minutes.
    Add water and one cup of flour. Mix well. Then add baking soda, cinnamon, salt, oil and an additional cup of flour. 
    Continue gradually adding flour until all flour has been used. Lastly, fold in the cinnamon chips. The dough will be very wet and shaggy. Stir well so all flour is well incorporated.
    Spray two bread pans with a nonstick spray and sprinkle with cornmeal. Shake cornmeal (or semolina) gently around pan so it covers all areas and dump out any extra.
    Pour half of the bread dough into each pan. Spray a spatula with nonstick spray and use spatula to spread dough evenly in pan. Cover pans with plastic wrap and allow dough to rise until it comes just below the top of the pan – about 45-60 minutes.
    Brush melted butter over the tops of each loaf. Bake in a preheated 375° oven for 25 minutes. Rotate pan and bake for an additional 10 minutes.
    Remove from oven and let rest for 2-3 minutes and then remove bread from pans.
    Place bread on a baking rack to fully cool. Once bread has been fully cooled, it can be sliced. Each loaf can be sliced into 10 slices.
