Cowboy Beef Ragout

This comfort meal is a savory cross between a beef stew and a sloppy joe. What is more hearty than thick tomato sauce over potatoes?!

This was my first time cooking with pearl onions and it didn’t disappoint. If you have an aversion to these larger pieces of onion, skip completely OR chop up a white onion. Also, if you prefer a more health conscious route, you can substitute ground turkey instead of beef. This can easily be served over brown rice or cauliflower rice instead of potatoes.

What the hell is Ragout? Are you asking yourself why Wren spelled Ragù wrong? I don’t blame you. Ragù is a sauce while Ragoût is a stew. (Insert shrug emoji). I don’t make the rules.

Cowboy Beef Ragout

Ingredients
  

  • 1 cup chicken stock, divided
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 lb ground beef, lean
  • 1 tbsp Worcestershire sauce
  • salt & pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 sliced green onions, parts divided
  • 1/2 cup pearl onions, thawed if frozen
  • (2) 14.5 oz cans diced tomatoes with green chilis, divided
  • 2 tbsp BBQ sauce
  • 1 tbsp chopped fresh chives (optional garnish)

Instructions
 

  • 1. Whisk ¼ cup stock and cornstarch in a small bowl. Set aside. 
    2. Heat oil in a large skillet over medium-high. Add beef; cook & crumble until browned. Drain excess grease. Stir in Worcestershire sauce, salt, pepper, garlic powder, onion powder and white parts of green onions; cook 2-3 additional minutes. Remove mixture from pan.
    3. Add pearl onions to pan; cook 2 minutes. Add 1 can diced tomatoes and BBQ sauce; cook 3 minutes. Stir in cornstarch mixture followed by remaining ¾ cup chicken stock. Season with more salt and pepper at this time. Cook about 4-5 minutes until thickened over medium heat.
    4. Lastly, add back in the beef mixture, rest of green onions and remaining can of tomatoes. Stir over medium heat until completely heated through. Garnish with chives. Serve over mashed potatoes, rice or butter noodles.
