Black & Bleu Balsamic Salad

This hearty salad includes savory potatoes, juicy steak and a rich, creamy balsamic vinaigrette. The steak is pan-seared to perfection and pairs so well with bleu cheese crumbles.

This is what salad dreams are made of. I try to eat healthy on occasion, but don’t always feel full. This salad is so hearty that it can be served as the main dish for lunch or dinner.

First, whisk together the marinade ingredients. Place steaks in a gallon zip lock bag and pour over the steaks. Place in the fridge. Marinade the steaks for at least four hours.

Preheat oven to 400 degrees. Toss potato chunks with grainy mustard and minced garlic. Spread out over prepared baking sheet and roast 25-30 minutes.

Place a cast iron over medium heat. Place olive oil and when it shimmers, begin pan-searing your balsamic steaks. Cook for 15-20 minutes.

Whisk together dressing ingredients. Place lettuce in 2-3 bowls and assemble. Trust me, it’s as good as it looks!
