Peanut Butter Graham Cracker Pie

This no-bake Peanut Butter Pie is rich, decadent and crazy easy to make. It features a creamy peanut butter filling, graham cracker crust and bites of Reeses candy with chocolate ganache. Unreal!

It’s National Pi Day! What the heck is Pi day? It’s not actually “Pie” day (which is celebrated on January 23 for those of you interested). March 14 internationally celebrates the mathematical constant π.

Am I a mathematics enthusiast? Well, no. Not at all, actually…

But as a foodie, this day HAS to be celebrated. My husband requested I come up with our own PB pie recipe. He is a total peanut butter junkie and has passed this on to our children. There could be worse things, right!? I found a pre-made graham cracker crust in our pantry so I really simplified this recipe and made it completely no bake. Peanut Butter Graham Cracker Pie

This no-bake Peanut Butter Pie is rich, decadent and crazy easy to make. It features a creamy peanut butter filling, graham cracker crust and bites of Reeses candy with chocolate ganache. Unreal!

Ingredients
  

  • (1) 9" graham cracker crust

Filling:

  • cup heavy cream
  • 8 oz cream cheese, softened to room temperature
  • ½ cup powdered sugar
  • ½ tsp salt
  • 2 tsp vanilla extract
  • 1⅓ cup cream peanut butter

Chocolate Ganache Topping:

  • 1 cup milk chocolate chips
  • ½ cup heavy cream
  • ¼ cup dry, roasted peanuts
  • ½ cup chopped reeses peanut butter cups

Instructions
 

  • In the bowl of a stand mixer fit with the whisk attachment, beat the cream and cream cheese together until stiff peak forms (5-6 minutes). Add the powdered sugar, vanilla and salt. Finally, beat in the peanut butter until smooth.
  • Pour the filling into the crust. Chill in the refrigerator for at least 2 hours to overnight. Do not put on toppings until ready to serve.
  • Ganache: Heat heavy cream over medium heat in a small saucepan. When it begins to boil, remove and pour over the chocolate chips. Let sit for 2 minutes before stirring until combined and all heavy cream is incorporated. Drizzle over the pie and top with reeses and peanuts. Enjoy!
