Broccoli Cheddar Chicken Salad

This recipe is a main dish twist on traditional broccoli salad! Broccoli cheddar chicken salad recipe can be eaten in various ways including on a wrap, sandwich or on it’s own with some toasty bread. The creamy ranch is a perfect offset of the crunchy broccoli and is even better eaten the next day!

This recipe only has a handful of ingredients. Don’t let that fool you; it’s bursting with flavor. I use Bolthouse Farms Classic Ranch Dressing. It’s yogurt based and only 45 calories per serving!

This comes together in a pinch. Literally, under 10 minutes! I served mine cold on a toasted wrap. Feel free to serve warm!

Ingredients
  

  • 2 cups chicken, shredded
  • 2 cups broccoli florets, chopped
  • 2 green onions, diced
  • cup shredded cheddar cheese
  • ½ cup ranch dressing
  • salt and pepper, to tastse
  • 2 tsp garlic powder
  • 1 tsp onion powder

Instructions
 

  • 1. Make sure the broccoli is finely chopped and small. The chicken should be shredded and diced into small pieces.
    2. Combine broccoli, chicken, shredded cheddar, sliced green onions, and ranch dressing to a large bowl and stir until everything is evenly coated. Add the salt, pepper and powders and again stir.
    3. You can serve on a wrap, bread or as is. Keep leftovers in the refrigerator for 3-4 days.
