This simple syrup is made with water, sugar, strawberries and lime zest. You simply bring to a low boil, stir constantly for 10-12 minutes until fruit is softened and then strain through a mesh sieve. Viola!
You can store this simple syrup in the refrigerator for later use. This can also be made into a mocktail. Instead of champagne, use a mix of sparkling water/lemon-lime soda!
Strawberry Lime Bellini
Brighten up your brunch with this crisp summertime sip! The fresh strawberry lime simple syrup and champagne make this the perfect colorful and fruity drink.
Ingredients
- 1½ cups sliced strawberries
- 1 cup water
- 1 cup granulated sugar
- 2 limes
- 1 bottle prosecco (chilled)
Instructions
- Zest one of the limes, but juice both limes.
- Add zest, juice, strawberries, water and sugar to a sauce pan. Bring to a boil over medium heat, then reduce to a simmer. Stir occasionally, cooking for about 20 minutes until the liquid takes on a deep red color and the strawberries are softened. Pour the liquid through a fine mesh sieve into a jar or dish. Reserve the liquid and allow to cool for 1-2 hours at least.
- When ready to prepare cocktail, add 2 parts simple syrup to 5 parts prosecco. Stir gently. Garnish with a strawberry and/or lime wedge. Enjoy!
