For this wrecipe, I decided to make things a little bit more simple for myself. Instead of adding peppers, I opted to use a southwest style hash brown mix that already has those things included.
While the hash browns cooked in the oil/butter, begin browning the meat and cooking the onions.

Saucy Mexican Beef & Eggs Breakfast Skillet
Zesty skillet meal made with sautéed onions, fresh eggs and flavorful saucy beef. Perfect for a weekend brunch or even a weeknight dinner! Topped with cilantro, sour cream or avocado.
Ingredients
- 20 oz bag southwest style hash browns (or potatoes o'brien)
- 1 tbsp olive oil
- 2 tbsp butter
- 1 lb lean ground beef
- 1 tbsp minced garlic
- ½ white onion, diced
- (1) 15 oz can tomato sauce
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tbsp paprika
- 6 eggs
- Fresh cilantro, avocado and/or sour cream
Instructions
- 1. In the base of a skillet over medium heat, combine the olive oil and butter. Add the hashbrown mix and begin cooking.2. In a separate skillet, begin browning the beef and diced onion. Add in the minced garlic. When fully cooked, stir in cumin, chili powder and paprika until meat is coated. Then, stir in the tomato sauce. Cook for 5 minutes, until sauce is reduced. 3. Your hashbrowns should be almost cooked at this point. Create an even layer in the base of your cast iron skillet. Then, pour the saucy beef mixture over the top. Make six indentations with the bake of a spoon and crack in egg into each of these indentations. Place into the oven and bake, uncovered for 15 minutes. 4. Remove from oven and let cool for 5 minutes. Garnish with cilantro. Serve with warm, crusty bread! Enjoy.
