Strawberry Lime Bellini
Brighten up your brunch with this crisp summertime sip! The fresh strawberry lime simple syrup and champagne make this the perfect colorful and fruity drink.
- 1½ cups sliced strawberries
- 1 cup water
- 1 cup granulated sugar
- 2 limes
- 1 bottle prosecco (chilled)
Zest one of the limes, but juice both limes.
Add zest, juice, strawberries, water and sugar to a sauce pan. Bring to a boil over medium heat, then reduce to a simmer. Stir occasionally, cooking for about 20 minutes until the liquid takes on a deep red color and the strawberries are softened. Pour the liquid through a fine mesh sieve into a jar or dish. Reserve the liquid and allow to cool for 1-2 hours at least.
When ready to prepare cocktail, add 2 parts simple syrup to 5 parts prosecco. Stir gently. Garnish with a strawberry and/or lime wedge. Enjoy!
