Every now and then, I sneak in a healthy recipe. This is a favorite of mine for weeknight dinners or lunch meal prep. Seasoned fish bites with fresh peppers broiled in the oven and served with tortillas or over a bed of rice. Tilapia is a good choice for these, but feel free to expand your horizons by using a different milld fish like snapper, trout or bass.
After fully dousing the fish bites into the seasoning, place onto a sheet pan that has been prepared with parchment paper or aluminum foil. Scatter the julienned peppers and onions across the pan. Voila! Place in the oven to cook. You, my friend, have a sheet pan dinner now.
While the fish is cooking, prepare the rice or warm your tortillas. Enjoy!
Blackened Sheetpan Tilapia Fajitas

Tilapia is a good choice for these, but feel free to expand your horizons by using a different milld fish like snapper, trout or bass.
Ingredients
- 1 each of orange pepper, yellow pepper and red pepper julienned
- 1 yellow onion, sliced
- 4 tilapia fillets, cut into bite sized pieces
- ½ tsp garlic powder
- ½ tsp cayenne pepper
- 1 tbsp chili powder
- 2 tsp cumin
- 1 tsp onion powder
- Cilantro and limes for garnishing, if desired
Instructions
- 1. Preheat oven to 400 degrees. Line cookie sheet with parchment paper. 2. Place prepared vegetables on the cookie sheet and place in oven.3. While the vegetables are in the oven, start on the fish. Pat tilapia filets dry with paper towels. 4. Mix together seasonings in a shallow bowl. Remove cookie sheet from oven at this time.5. Dip each piece of fish into the mixture, turning over and coating entirely. Place on the cookie sheet.6. Return to oven and cook for 12-14 minutes. 7. Place over tortillas or rice. Serve warm. Garnish with cilantro and limes.
