Saucy Asian Crunch Wraps

Easy, refreshing asian wrap that offers a simple and healthy lunch or dinner. Soft tortilla filled with crunchy coleslaw, chicken and a homemade (slightly spicy) peanut sauce.

Ingredients
  

Filling:

  • 3 cup cooked chicken, chopped or shredded
  • 3 cups coleslaw mix
  • 1 cup shredded carrots
  • 2 tbsp cilantro, roughly chopped
  • 1/2 cup peanuts, roughly chopped
  • 4-6 tortillas

Sauce:

  • 2 tbsp honey
  • 1/3 cup tahini (or creamy peanut butter)
  • 2 tbsp rice vinegar, unseasoned
  • 2 tbsp soy sauce
  • 1/4 cup sesame oil
  • 1 tbsp fresh grated ginger
  • 1 tbsp minced garlic
  • salt and pepper
  • pinch red pepper flakes, optional

Instructions
 

  • Whisk together the sauce ingredients until smooth. Pour over the slaw mix and stir until combed and evenly coated.Heat the tortillas for 15 seconds in the microwave or on the stovetop on a skillet. Divide the coleslaw mix between tortillas and then top with the cooked chicken. Roll tightly and secure with toothpicks, if necessary. Cut in half. Serve!
