I’m always thinking of new weeknight recipes for my busy, working folks that don’t usually require extra trips to the grocery store searching for crazy, unheard of ingredients. For me, there is nothing better than NOT having to put my bags down and cook a meal after working all day. The aroma of a cooked meal when you walk in the door is one of THE BEST THINGS.

Line your crockpot with a slow cooker liner (easy cleanup). Whisk together ingredients in a small bowl. Set aside. Season your chicken all over with salt and pepper and place into the crockpot. Pour the mixture, covering the chicken. Place a lid on and cook for 6 hours on LOW.

When cooking is complete, shred the chicken in the crockpot. Stir around to evenly coat the chicken. That’s it! Serve on a bun, over mashed potatoes or on it’s own with a vegetable side.

Slow Cooked Peach BBQ Chicken

Equipment

  • Crockpot

Ingredients
  

  • 2 lb boneless, skinless chicken breasts or thighs
  • Salt & Pepper
  • 12 oz Peach jam (or preserves)
  • 1/2 C BBQ sauce Use your favorite kind!
  • 1 tbsp minced garlic
  • 1 pinch red pepper flakes optional

Instructions
 

  • 1.     Line a crockpot with a slow cooker liner. Season the chicken all over with salt and pepper and place into crockpot. 
    2.     Whisk together the jam, bbq sauce, minced garlic and optional red pepper flakes in a medium sized bowl. Pour over the chicken. Place lid on crockpot and cook on low for 6-8 hours.
    3.     Once done cooking, shred the meat and place over mashed potatoes or on a bun with a melted slice of provolone. Yum!
