HUGE fan of utilizing the crockpots on this food blog. Have you noticed? The soda tenderizes the meat while it cooks for hours and adds a lovely sweetness.

Serve this over a pile of mashed potatoes or make an open faced sandwich with some crusty bread. This will NOT disappoint!

Ingredients

  • 4 lb boston butt roast
  • 2 tsp garlic salt
  • 2 tsp pepper
  • 2 tsp ground sage
  • 2 tbsp olive oil
  • 2 bay leaves
  • 1 can golden cream of mushroom soup
  • 1 packet Lipton's onion seasoning mix
  • 12 oz Dr. Pepper
  • 1 tbsp cornstarch + 1/4 cup cold water

Instructions

  • If you have a crockpot with the saute function, heat oil in the base. Otherwise, heat in a large skillet and sear the meat on each side. Return to crockpot. Season with garlic salt, pepper and sage. Pour the soda, soup and sprinkle the onion mix over. Place lid over and cook for 6-8 hours on low.
  • Remove roast from crockpot and shred. Place the crockpot back on saute function. Whisk 1 tbsp cornstarch to 1/4 cup cold water. Whisk into the liquid. Saute to thicken sauce for 10-15 minutes. Return meat to crockpot and toss to evenly coat. Serve warm over mashed potatoes. Enjoy!
