Caramel Nut Breakfast Bread with Cinnamon Drizzle

Coffee cake PERFECTION! This recipe offers a moist, delicious cake with a brown sugar and nut crumble. It's tied together with a cinnamon drizzle. Eat for breakfast, a snack OR dessert.

Ingredients
  

  • 1 15.25oz box vanilla cake mix
  • 2 large eggs, room temperature
  • 2/3 cup milk
  • 1/2 cup flour
  • 1/4 cup canola oil
Crumble
  • 1 cup packed brown sugar
  • 1/2-3/4 cup chopped pecans
  • 4 tbsp butter, melted
Cinnamon Drizzle
  • 1 cup powdered sugar
  • 1 tbsp Karo light syrup
  • 1 tbsp milk
  • 1 tbsp cinnamon

Method
 

  1. Preheat oven to 350°. Reserve and set 1 cup of the cake mix for topping aside. Grease a 9x 13 in baking pan.
    In a large bowl, combine eggs, milk, flour, oil and the remaining cake mix; beat on low-medium for two minutes until combined. Transfer to baking pan.
    In a separate bowl, combine brown sugar, pecans and reserved cup of cake mix; stir in butter until crumbly. Sprinkle over batter.
    Bake 25-30 minutes or until a toothpick inserted in center comes out clean. 
    In a small bowl, mix confectioners' sugar, corn syrup, milk and cinnamon until smooth; drizzle over the warm cake. Serve warm.
