Total Time 45 minutes mins
- 2 cups apples, peeled and cubed
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tbsp AP flour
- 2 tsp lemon juice, freshly squeezed
- 2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp ginger
- 1/4 tsp all spice
- 1/4 tsp cardamom
- 10 soft caramel candies, roughly chopped
- Premade pie crust
- coarse sea salt, for sprinkling
- egg wash (1 large egg + 1 tsp water)
Preheat oven to 375° and line baking sheet with parchment paper.
Toss together the apples, sugars, flour, lemon juice and spices.
Dust work surface. Roll pie crust dough out and use a cutter to make an even number of shapes.
Top half of the shapes with about 2 tbsp of apple mixture, placing chopped caramel pieces on top. Leave a decent space between mixture and the edges (at least 1/2-3/4 inch). Place the other empty halves on top and seal using a fork to crimp along the edges.
Move pies onto the baking sheet. Whisk together egg and tsp of water in small bowl. Brush tops of pies with the egg wash and sprinkle sea salt over. Cut a couple of vents to the tops of each pie with a paring knife. Bake for 30-35 minutes or until golden brown.
