Savory French Toast

Savory twist on a classic breakfast staple! I made it EVEN better by adding fresh herbs, farm fresh eggs and topping it with savory meats. A delicious breakfast or brunch dish!

Ingredients
  

  • 5 large eggs
  • 1/2 cup milk
  • 2 tsp thyme
  • 1 tsp oregano
  • 1 tbsp minced garlic
  • 1 tsp coriander
  • salt and pepper
  • 6 slices french bread
  • 1 stick butter (divided)
  • eggs cooked to your liking
  • bacon, ham, proscuitto or sausage (also cooked)
  • microgreens and additional fresh herbs such as thyme for topping

Instructions
 

  • Combine the first 7 ingredients in a shallow baking dish and whisk together.
  • Place a large skillet over medium heat and melt half of the stick of butter. Press 3 slices of bread in the shallow baking dish to soak. Flip and soak each side for 1 minute.
  • Transfer the soaked slices to the hot skillet and sear 3-4 minutes each side until browned. Remove and repeat with the remaining slices. You may need to melt the additional 4 tbsp butter in the hot skillet prior to searing the remaining slices.
  • Top each serving with egg, sea salt, cracked black pepper, greens and meats. Enjoy!
