Snickers Pancakes with Chocolate Peanut Syrup

The leaning tower of chocolate goodness. I don’t think I’ve seen my toddler so excited than when he saw Mommy chopping candy bars before 8 am. Not going to lie, I think my husband was pretty thrilled also.

These are actually very easy to whip together. I based this off of my favorite pancake recipe that I regularly use. I decreased the amount of sugar a bit, because.. duh.

The dough was a little drier than I had expected so I increased the amount of buttermilk before folding in the chopped snickers pieces. Viola! Perfect consistency.

We cook our pancakes on a large, standup Blackstone griddle which I HIGHLY recommend. We are able to cook things more efficiently than we would on a table top griddle and do a wide array of different foods. Link below!

Mix together your peanut sauce per instructions below before or after you’re done cooking pancakes. Keep a close eye, as you do NOT want burned syrup.

Fluffy Snickers Pancakes with Chocolate Peanut Syrup

Equipment

  • Griddle or nonstick pan

Ingredients
  

Pancake Batter

  • 1/2 c buttermilk
  • 1 egg large
  • 1/2 c AP flour
  • 1 tbsp sugar
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 snickers chopped

Chocolate Peanut Syrup

  • 3 snickers chopped
  • 1/4 c heavy cream
  • 1 tbsp maple syrup

Instructions
 

  • 1.     Preheat griddle to low/medium heat and spray with nonstick cooking spray. 
    2.     Whisk together the buttermilk and egg. Set aside.
    3.      In a large bowl, combine dry ingredients. Pour in the buttermilk mixture and stir until just combined. Fold in the chopped snickers. 
    4.     Batter will be thick. Pour 1/3 C each into pancakes and cook until bubbles form, then flip over. 
    5.     For the syrup, place the chopped snickers bars and heavy cream in a small saucepan over low heat and stir until just combined. Then, stir in the maple syrup. Pour over pancakes.
