Lemon Curd Air Fryer Donuts

I am OBSESSED with my kitchen gadgets. As a busy mom of three, I am interested in any and all tricks and gadgets that will make my life easier. Am I right, folks?

These donuts are simple and tasty. I LOVE how warm and chewy these were right out of the fryer. I used a simple biscuit cutter to make these perfect shapes before letting them rise again.

I then sprayed them down with a cooking spray to give them that golden brown hue. Enjoy!

Lemon Curd Air Fryer Donuts

Equipment

  • Air Fryer
  • Silicone Brush
  • Parchment Paper
  • Saran Wrap
  • Toothpick
  • Piping Bag and #3 filling tip

Ingredients
  

  • 2 ½ tsp active yeast mixed with 2 tbsp warm water
  • 1 cup milk, warmed
  • 2 tbsp granulated sugar
  • 2 eggs, lightly beaten
  • 4 cups AP Flour
  • 1 tsp salt
  • ½ cup lemon curd
  • cooking spray
  • 4 tbsp melted butter
  • ½ cup granulated sugar

Instructions
 

  • 1. In a small bowl, combine the yeast and warm water. Set aside for 5-10 minutes until foamy. Heat the milk until just warm, about
    2. In a small saucepan, heat milk just until warm.
    3. In the base of stand mixer fit with hook attachment, combine the flour, sugar, salt and eggs. Gradually pour the yeast mixture and milk. Mix on low until dough becomes elastic and sticky. Turn the dough onto a lightly floured surface and continue kneading for about 4-5 minutes. Place into an oiled bowl, cover and set aside until doubled in size (about two hours).
    4. Once risen, roll the dough onto a lightly floured surface until it's about 1/2" in thickness. Using a 2" biscuit cutter, cut into rounds and place onto parchment paper that is placed on baking sheets. Continue re-rolling dough scraps until you use all the dough.
    5. Cover doughnuts with plastic wrap and allow them to rise for 20-30 minutes.
    6. Preheat air fryer to 370° for 5 minutes. Once preheated, spray the donuts with cooking spray. Cook for 4 minutes. Flip and then continue for 3-4 minutes until light golden brown.
    7. Remove from oven. Brush with melted butter and roll in the granulated sugar. Set aside to cool slightly.
    8. Make a hole in the side of each donut using a toothpick. Then, fill piping bag with lemon curd fit #3 tip to fill each donut. Serve warm and best eaten the day of the making!
