Prosciutto Asparagus Bundles

Roasted prosciutto wrapped in asparagus with a sprinkle of Parmesan cheese are the PERFECT elegant side dish for a summertime meal. It’s super easy, can pretty much be paired with any entree and dresses up your plate.

I’ve created this recipe for four servings, but it can easily be doubled or tripled depending on your crew. I love how asparagus (when roasted) is crisp, yet tender. The prosciutto wraps it ALL together, literally and figuratively. You can never go wrong by adding prosciutto, in my opinion.

Prosciutto Asparagus Bundles

Ingredients
  

  • 1 lb asparagus
  • 4 slices prosciutto
  • 1 tbsp olive oil
  • 1 tsp cracked black pepper
  • 1 tsp garlic salt
  • 1/4 cup parmesan cheese

Instructions
 

  • Preheat the oven to 400° and prepare a cookie sheet with tin foil.
    Divide the asparagus spears into 4 bundles. Wrap each bundle with one piece of prosciutto. Secure with a toothpick if needed. Lay the bundles onto the cookie sheet.
    Brush olive oil over the asparagus with a silicone pastry brush. Season with cracked black pepper and garlic salt. Gently sprinkle the parmesan cheese over the center of the prosciutto.
    Roast until the spears have begun to wilt and the prosciutto is cooked, about 20-25 minutes. Remove the toothpicks prior to serving.
