I’m going to just come out and say it. I wasn’t the biggest fan of pork chops until I tried them in the instant pot. The best part is that there is minimal prep and on the table in less than 30 minutes.
I simply sear the pork chops with seasoning in the base of the instant pot before cooking. You pressure cook for 7 minutes and viola! You can whip up the gravy using a little water and cornstarch at the end.

Instant Pot Pork Chops & Gravy

Ingredients
- 4 bone-in pork chops
- ⅓ cup brown sugar
- 1 tbsp paprika
- 1 tsp onion powder
- ½ tsp garlic salt
- 2 tbsp butter
- 1½ cup chicken broth
- ¼ cup water with 1 tbsp cornstarch
Instructions
- 1. Mix the seasonings and brown sugar in a shallow bowl. Rub the sides of each porkchop.2. Set the saute function of your instapot and melt 2 tbsp butter. 3. Sear each porkchop for 2-3 minutes on each side. Remove and set on a plate. 4. Pour chicken broth into the base of instapot and stir to remove charred bits. 5. Place the porkchops back into the instapot and seal. Set Pressure Cook function for 7 minutes. (Add additional minute if you have thicker pork chops). 6. Remove pork chops. Turn the saute function back on. 7. Whisk together the water and cornstarch. Gradually pour in and whisk together constantly until sauce is thickened and it turns into a gravy. Season with salt and pepper. Serve over the pork chops and potatoes. Enjoy!
